Description

Fresno County is requesting proposals from one qualified vendor to provide comprehensive food services for its adult jail facilities and Juvenile Justice Campus. The contractor must bid on both groups and provide meal preparation, delivery, collection of trays and waste, staff meals, medical and religious diets, sack meals, snacks, special menus, food purchasing, inventory control, sanitation, security, reporting, and quality assurance. Adult services cover approximately 619,735 meals for the stated three-month reference period; juvenile services include approximately 19,564 meals and 5,839 snacks for the stated three-month reference period. The contractor will use the County's Central Kitchen, provide and manage personnel and supplies, maintain kitchen equipment, pay specified operating costs, and perform scheduled equipment maintenance. Youth menus must comply with USDA school meal and snack requirements, the Healthy, Hunger-Free Kids Act, California standards, and applicable juvenile-facility requirements; adult menus must meet applicable correctional nutrition standards. Proposals must include detailed menus, nutrition analyses certified by a registered dietitian, organizational and implementation plans, contingency procedures, quality assurance plans, references, pricing, and completed required forms. The contract is intended for three years with up to two additional one-year extensions. A $500,000 faithful performance bond is required.
