Description
Dane County is seeking an experienced food service operator to manage the Alliant Energy Center’s campus-wide food and beverage program. The awarded operator will provide exclusive retail concessions, catering, alcoholic beverage service, vending, food trucks and other approved food service operations across the Exhibition Hall, New Holland Pavilions, Arena, outdoor venues, and other included facilities. Responsibilities include menu development, event-specific offerings, catering sales and billing, staffing and management, customer service, sanitation, janitorial services in food service areas, pest-control coordination, composting and waste procedures, marketing, reporting, and 24/7 emergency support. The operator must provide and maintain POS systems, licenses, uniforms, labor, operating supplies, required permits, a facility-wide liquor license, new equipment and leasehold improvements as needed, and other startup or replacement investments. The operator must develop HACCP procedures, comply with food safety and alcohol-service requirements, support local and sustainable food offerings, minimize subcontractor use where practical, and provide detailed profit-and-loss projections. A five-year initial contract is scheduled to begin July 1, 2027, with a mandatory vendor conference and electronic proposal submission through the County’s eProcurement Portal. The required cost proposal must be completed in the provided Excel attachment, while the main proposal must address organizational experience, retail and catering concepts, marketing and technology, personnel, transition, ongoing management, and financial projections.
