Description
The City of Wilmington is seeking an experienced vendor to lease and operate the cafe at the Skyline Center. The selected operator will provide daily coffee, specialty beverages, tea, bottled beverages, snacks, and grab-and-go breakfast and lunch items, including sandwiches, salads, wraps, bakery products, and other pre-prepared or light-assembly foods. The space has no commercial kitchen, grease trap, hood ventilation system, or cooking equipment, so operations are limited to the listed beverage and food offerings. Optional catering and pre-arranged food and beverage service may also be provided as a value-added service. The vendor will hire, train, supervise, and manage staff; maintain inventory and approved operating hours; furnish food, beverages, supplies, inventory, and vendor-owned equipment; operate a cash-and-card POS system; maintain the leased premises; coordinate deliveries; market the cafe; and maintain all required permits, licenses, insurance, and regulatory compliance. The proposal must include a cover letter or statement of interest, operational plan, proposed menu and pricing, marketing plan, projected budget, and proposed monthly lease fee. The City will provide the furnished cafe space, specified equipment and fixtures, espresso equipment, and utilities at no additional cost.
