Description
The City of Richardson is soliciting proposals for an exclusive concessionaire to provide food, beverage, alcoholic beverage, bar, catering, and related concession services at the Charles W. Eisemann Center. The scope includes staffing, food and beverage preparation and sales, event and backstage service, catering support, cleaning and sanitation, inventory and sales reporting, point-of-sale operations, and service for all events requested by the Center regardless of anticipated attendance. The facility averages more than 225 concession openings annually and more than 160,000 attendees, with service required before events, during short intermissions, and after performances as needed. The selected concessionaire will hold exclusive alcoholic beverage service rights, must obtain required licenses and permits, and must provide a minimum 10% commission on gross receipts net of applicable taxes. A valid TABC permit may be obtained after award but must be in place before the contract term and alcoholic beverage service begin. The proposer must address experience, staffing, operations, equipment, marketing, financial capacity, references, pricing, and subcontracting. The proposal must include five references for comparable food and beverage services, a current audited financial statement and three preceding years of financial statements, a site supervisor resume, staffing and operational materials, proposed menus and prices, and the completed commission-fee form. Addendum 1 establishes a one-year initial contract with four additional one-year renewal options and requires acknowledgment of the addendum with the submission.
