Description
The City of Virginia Beach is soliciting a contractor to provide comprehensive food and beverage operations at the Virginia Beach Convention Center. The scope includes catering for meetings, banquets, receptions, and special functions; fixed and mobile concession stands; vending; dedicated lounges; pantry and food production/storage areas; off-site functions approved by the City; and alcoholic beverage sales subject to applicable licensing requirements. The contractor will provide staffing, menus, food and beverage procurement, linens, cleaning and sanitation, pest control, waste diversion, food donations, sustainable sourcing, equipment and smallwares management, point-of-sale system maintenance, financial reporting, and ongoing operational support. The contractor must submit wage, fee, commission, purchasing-specification, and proposed-smallwares/equipment schedules. The agreement is expected to have an initial five-year term with two one-year renewal options. The contractor must pay the City commissions based on gross sales, provide a minimum annual guarantee of at least $750,000, contribute 2% of annual gross sales to a capital reserve/maintenance fund and 1% to a marketing fund, and provide a $1,000,000 performance bond. Proposals must address the required sustainability, sanitation, staffing, financial-control, insurance, licensing, and performance requirements.
