Description
The City of Port St. Lucie is soliciting proposals from an experienced food and beverage operator to provide exclusive, year-round dining and event catering services at the Saints Golf Course. The scope includes lunch and dinner service, a full bar, customizable menus accommodating vegetarian, vegan, gluten-free, and allergen-sensitive needs, catered events and banquet operations, mobile food cart service, weekly entertainment, and management of the rentable Sandpiper Room. The contractor must supply and manage food, beverages, staffing, training, sanitation, cleaning, inventory, marketing, customer service, food safety, licensing, permits, and its own point-of-sale system. Proposals must address catering operations, pricing and commission rates, sanitation and safety, dining and catering methodology, organizational capacity, staffing, training, key performance indicators, transition, marketing, references, and a mandatory food tasting for shortlisted proposers. The initial contract term is three calendar years from execution, with two one-year renewal options at the City's discretion. Minimum commission rates are 10% for dining room sales, 12% for catering and banquet sales, and 12% for mobile cart sales.
