Description
Austin Peay State University seeks an operator to develop and operate a food and beverage concept in the Ann Ross Bookstore. The approximately 2,063-square-foot space includes back-of-house preparation space, customer seating, and patio access. The concept must include beverages but need not be a traditional coffee shop; it must be feasible within the existing facility, which has no traditional commercial kitchen hood unless modifications are approved. The operator will be responsible for staffing, daily management, food and beverage production, customer service, internal custodial needs, and operational supplies, and must comply with applicable food-safety requirements and the University's beverage agreement and campus dining brand restrictions. Proposals must include separate technical and cost proposals. The technical response covers qualifications and experience, references, concept and menu, staffing and operations, implementation, equipment and technology, marketing and community engagement, and other specified requirements. Finalists may be invited to give an in-person concept presentation and tasting. The contract term is five years.
