Description
The City seeks an experienced operator to manage Zelda’s 750 West restaurant and the East End concessions at the Lancaster Performing Arts Center. The operator will provide food, beverages, consumables, serviceware, staffing, training, point-of-sale capability, sanitation, routine equipment upkeep, and financial reporting. Operations must support scheduled performances and events, with restaurant and concession hours coordinated to patron demand. The proposal must describe the restaurant concept, menus and pricing, staffing and management, pre-performance service, marketing and business development, implementation, and compliance with the scope of work. The operator must maintain applicable business licenses, food safety credentials, permits, and insurance, and comply with health, sanitation, employment, and alcohol-service requirements. The City provides existing food-service equipment and utilities; the operator is responsible for its care and routine upkeep. The contract is planned for an initial three-year term, with up to two additional one-year extensions by mutual written agreement. Proposals must include a technical proposal, compensation proposal, financial statements, references, and the specified completed exhibits and other required credentials.
