Description
The Comanche Nation seeks an operator to lease and run the kitchen concession area at Watchetaker Hall. The Nation provides the approximately 336-square-foot space, existing commercial kitchen equipment, electricity, natural gas, and water. The operator is responsible for food and beverage service, purchasing inventory and supplies, staffing, daily operations, sanitation, customer service, and coordinating service for special events. Proposals should describe the proposed menu, pricing, operating hours, staffing, relevant experience, equipment use, and financial proposal. The proposed rent is $550 per month, with a refundable $550 security deposit and an initial 12-month term. The operator must obtain and maintain applicable food-service licenses, permits, training, inspections, and certifications, and must carry commercial general liability and workers’ compensation insurance as applicable. Proposals should include food-service credentials or documentation of the process for obtaining them, insurance certificates, and at least two business or professional references. The concessionaire is responsible for routine equipment care and damage caused by its negligence; approved major mechanical repairs to Nation-owned equipment are shared equally. The proposal is evaluated on experience, operating plan, financial stability, food safety, equipment management, customer service, financial proposal, licensing, and insurance.
