Description
The Utah Department of Corrections is seeking a licensed Registered Dietitian or specialized dietary consulting firm to evaluate, develop, implement, certify, and monitor a comprehensive correctional food-service nutrition program. The scope covers approximately 20,000 meals per day at two correctional facilities, with possible work for six community correctional centers. Services include four-week menu-cycle review, nutritional analysis, menu development, special-diet planning, and documentation of compliance with applicable standards. The contractor must address medical, therapeutic, religious, kosher, halal, vegan, vegetarian, allergy-related, gluten-free, and other dietary requirements; optimize menus for large-scale institutional production and existing food-service assets; and provide litigation-grade documentation, technical support, affidavits, depositions, and expert-witness testimony when requested. Routine planning is expected to be performed remotely, while authorized on-site inspections may be requested. The lead Registered Dietitian must hold an active Utah license or certification, possess at least a bachelor's degree in a relevant field, and pass required background screening. Responses are qualifications-based and must not include pricing.
